So summer is officially here (at least for me) this week as it’s been in the 90’s everyday so far. I’ve been lamenting the fact that we always have about a week of spring weather here that then quickly turns to hot, humid and sweaty misery. Oh global warming! It doesn’t help that I seem to sweat more than the average girl and I currently don’t know anyone with a pool. Sigh. All that to say, this weather definitely does not inspire laboring over a hot stove. So this week I’ve been resorting to any food that does not require cooking.
What’s on the menu? One of my favorite summer foods is fruit salsa of any kind, and this week I’m making pineapple salsa. This would be the perfect side dish to take to a BBQ with tortilla chips. Everyone will be super impressed and have no idea it only took you minutes to make!
I’ve spiced up my pineapple salsa with fresh ginger, cumin and cayenne pepper. The combination of the sweetness of the pineapple mixed with hints of spice and lime juice really kick this salsa up a notch. Eat this with chips, over tacos, even add it to curry. Sweet & Spicy Pineapple Salsa:
Serves 8-10
Ingredients:
1 pineapple chopped into bite-sized pieces
1 red bell pepper finely diced
1/2 a red onion finely diced
2 green onions thinly sliced
1 bunch of cilantro, stems removed
Small knob of fresh ginger, grated
1/2 tsp cumin
1/2-1 tsp garlic powder
Salt to taste
Cayenne pepper to taste
1/4 cup lime juice
Directions:
- Combine all ingredients above in large bowl.
- Allow to marinate in the refrigerator for at least two hours.
- Enjoy with your favorite chips!
